Zoodles are by far the most genius thing created! Zucchini made into noodles. There is so much flavor, and it's perfect, because in the summer there are plenty zucchini to eat! It's low carb, gluten free, and vegan. (minus the cheese)
So to start I took two medium sized zucchinis and peeled the thick green skin off. Then I continued to peel thin noodle-like pieces until I couldn't peel it any further. And that's it! Toss them in olive oil, salt and pepper, and fry them up in a skillet or wok. I topped it off with a sprinkle of Italian seasoning and Parmesan cheese. YUM! Try it! You won't be disappointed!
