Almond Butter Cookies!

With the whole gluten-free issue, I have been attempting to find new recipes that are gluten-free and are somewhat tasty. I threw together this faux peanut butter cookie recipe, which turned out to be just the kind of treat I had wanted. Since peanuts are indigestible and fatty, I decided that the better option was almond butter. It's a little better for you, and it's delicious.

Almond Butter Cookies:
1 C. Almond Butter
1 Egg
1 C. Sugar
1 tsp Vanilla

Preheat the oven to 350 degrees F.

Mix the ingredients in a medium bowl. Use spoon or hands to make a dough ball and place on a greased cookie sheet. (There is no need to use a fork to make the peanut butter cookie design, as it will not stay.) Bake for 7-10 minutes

It's a really easy recipe, and they are a wonderful snack.

Natural Living

So I have been really busy planning my wedding, and I found THE dress yesterday! I am so happy with it, I keep looking at it and dancing around.

I got a book in the mail that I ordered Called "The beginner's guide to Natural Living" By Larry Cook. It has a LOT of information that is important to your health. It is disturbing to me how much toxins get in our body just from our everyday living. I think that everyone should read this book, because, as I am sure you know by now, ignorance is NOT bliss. Why would you want to give yourself cancer later on in life, when this book shows you steps to living as healthy as you can?

I highly reccomend it, it's an easy read, and it is very good information.

Asthma? Say whaaaaa?

That's right. In the past, I have always been troubled with tightening in my chest. Right in the bronchial area. I now realized that it is linked to my wheezing and coughing. Because of this new discovery, I have decided it is necessary to go gluten-free and for the most part, dairy-free. I cheat a little here and there so that I don't go completely gluten and dairy crazy. I have noticed a difference in my respiratory health since I have cut out gluten and dairy. I hope that I will be able to find new and exciting gluten-free and dairy-free products and recipes. For now I will review one product. DeBoles Gluten-free brown rice speghetti style pasta.

Now, for me, I am allergic to tomatoes, which makes the very idea of eating spaghetti depressing. But luckily for me, olive oil and crushed garlic sprinkled with salt is enough for me.



The pasta was very good, however, be very careful when cooking it. Read the instructions carefully, because all gluten-free pasta's are very easy to over cook. I have had many a bowl of mushy pasta, and it is really a taste bud let down.

If you are a huge spaghetti fan, I would definitely recommend this brand, because it is very reasonably priced, compared to other gluten-free pasta's, and the taste is great.

As for now, I am in the process of making a Bob's Red Mill gluten-free bread machine bread. And I have a feeling it will be a flop. But here's for hoping it's not!!
