I'm a new woman. I don't work for the man anymore, and I'm officially starting my own business via Shaklee. A very well known and used vitamin company, known for their natural and quality vitamins. I've never been more excited. Also, since I've been 'unemployed', I have taken up German lessons, and in the future, I will definitely be trying to duplicate their cuisine. I've learned a new song on the piano, it's very beginner, but it is a start. It's always been a total unknown to me, playing the piano with two hands and reading two sets of bars on a sheet of music. Soon enough I'll be up there with Mozart, right? Well, maybe not, but like I said, it's a start.

Long time no post

I really must apologize for my absence. I have been slaving away, working a job at the local grocery market. Luckily for all of you, I have recently put my two weeks notice in to my employer, and will therefore be free to post more often. I've got a lot of neat things up my sleeves and am excited for this year. guten abend! Girl in the purple shoes

I'm pregnant!!! I am so excited! I've been obsessing over all things baby for what feels like a few weeks, but in reality, it's only been three days! So excited to go baby shopping and maternity shopping!! :)

Zoodles are by far the most genius thing created! Zucchini made into noodles. There is so much flavor, and it's perfect, because in the summer there are plenty zucchini to eat! It's low carb, gluten free, and vegan. (minus the cheese)

So to start I took two medium sized zucchinis and peeled the thick green skin off. Then I continued to peel thin noodle-like pieces until I couldn't peel it any further. And that's it! Toss them in olive oil, salt and pepper, and fry them up in a skillet or wok. I topped it off with a sprinkle of Italian seasoning and Parmesan cheese. YUM! Try it! You won't be disappointed!

New recipe!

So my husband and I have been watching A LOT of Chopped lately. It's a terrible obsession, and sometimes we take it too far, but from all the hours of watching, I've been inspired to create this dish! :) It's naturally gluten free and vegetarian. Anyway, I've created a Pesto Black Bean and Rice Casserole. If you love pesto, you'll love this gluten free dish.

About 2-4c. Leftover White Rice
1/2 c. Pre-made pesto sauce
1 15oz can of black beans, strained and rinsed
1-2 Tbsp Olive oil
1/4 c. Parmesan &/or Grated Mozzerella, Could use vegan cheese
Salt & Pepper to taste

Diced cucumber
Squeeze of lemon juice

Preheat the oven to 350 Degrees F.

Mix together leftover rice, black beans, pesto sauce and olive oil together in a bowl. Make sure that the rice is evenly coated with pesto. Place mixture in a casserole dish and spread evenly. Sprinkle the top with the cheese of your choice, I like local cheese, so I used Rumianos Organic, non-GMO Mozzerella.

Bake for 20-25 minutes, or until cheese is melted and rice hot all the way through.

Serve it up with diced cucumbers and lemon juice on top! Voila! It's a delicious, healthy and filling meal. A perfect idea for a beautiful Spring day!
